How do you know Sidr honey is genuine?
Almost every answer to this question begins with the seller asking you to trust them. Ours does not, because you should not have to.
The scale of the problem
A 2023 study published in Foods examining honey imported into the United Arab Emirates found that roughly one in five samples failed to meet UAE standards. A separate 2025 analysis of honey label compliance found that fewer than two percent of sampled products were fully compliant with labelling requirements.
Read those two findings together and the picture is uncomfortable. A substantial share of honey on sale is not what it says it is, and the labels are not reliable enough to tell you which share.
Why the usual signals do not work
Buyers are commonly told to test honey at home: does it dissolve in water, does it stick to a thumb, does it burn a matchstick. None of these distinguish real honey from adulterated honey. They mostly measure viscosity, which is a function of moisture content, which can be identical in an adulterated sample.
Nor does price. Adulteration is profitable precisely because adulterated honey can be sold at authentic prices.
Nor does origin claimed on a label, because that is the claim under examination.
What actually distinguishes genuine Sidr honey
Four laboratory tests, in ascending order of what they prove:
1. Pollen analysis (melissopalynology)
A microscopic count of pollen grains in the sample. Genuine Sidr honey shows a dominant proportion of Ziziphus spina-christi pollen. This is the test that establishes the honey is actually Sidr, not simply honey sold as Sidr. A low Ziziphus percentage means the bees were foraging elsewhere, whatever the label says.
2. C4 sugar analysis by IRMS
Isotope-ratio mass spectrometry distinguishes the carbon signature of honey from that of cane and corn syrup. It is the standard test for the most common form of adulteration: cutting honey with cheap sugar syrup. It returns a pass or a fail, not a matter of opinion.
3. HMF and diastase
Hydroxymethylfurfural accumulates when honey is heated or stored badly. Diastase is an enzyme that degrades under the same conditions. Together they tell you whether honey described as raw was actually treated. High HMF with low diastase is the signature of honey that has been heated, usually to delay crystallisation or to make filtration easier.
4. Moisture
Above roughly twenty percent, honey can ferment. Premium Sidr is typically well below seventeen. Moisture is a proxy for how ripe the honey was at harvest and how carefully it has been handled since.
What DAY21 does about it
Every DAY21 jar carries a lot number. That lot number resolves to a permanent public page showing the full third-party laboratory analysis for that specific batch: region and wadi, harvest window, moisture, HMF, diastase, pollen analysis, C4 sugar result, safety panel, the name of the laboratory, the date of the test, and the unedited report as a PDF.
We publish every batch. Including any batch that performs less well than we would like, with a note explaining what we did about it. A transparency programme that only publishes flattering results is not a transparency programme.
What to ask any seller
If you are considering Sidr honey from anyone, including us, these questions separate verifiable sellers from confident ones:
- Which specific wadi or valley did this honey come from?
- What was the pollen analysis result for this batch?
- Has this batch had a C4 sugar test, and can I see it?
- What are the moisture, HMF and diastase figures?
- Which laboratory performed the analysis, and on what date?
- Can I see the report itself, not a summary of it?
A seller who can answer all six for the specific jar you are holding is doing something the category mostly does not do.
