AWSAN is a Samra honey from Yemen. Samra is a separate forage to Sidr, worked at a different point in the year, and it produces a much darker honey — near-black in the bottle, amber where the light gets through it. If you know the house from the Sidr, this will not taste like it. That is the point of carrying it. The honey is raw. It is settled and strained, not heated and not pressure-filtered, and nothing is blended into it. Depth of colour and thickness shift between harvests according to the season, and we do not adjust for that. Raw honey may thicken or crystallise over time; this is normal and is not a defect. Supplied in a 350g or 750g glass bottle with a lacquered steel lid.
Samra
Samra is darker and drier than Sidr, with much less of the sugar note. It runs towards malt, molasses and a slight smokiness, and finishes bitter rather than sweet. It holds its own against strong food.
