TUBBA is a single-origin Sidr honey from Yemen, from the Osaimi source. The bees forage Ziziphus spina-christi, the Sidr tree, in the flowering window that follows the seasonal rains. Osaimi and Doani are both Sidr and they are not interchangeable — different ground, different trees, and a noticeably different honey in the mouth. This one is raw. It is settled and strained, not heated and not pressure-filtered, and nothing is added to it. Colour and density move from harvest to harvest with the rainfall and the flowering. We treat that as information about the season rather than a problem to be fixed. Raw honey may thicken or crystallise over time; this is normal and is not a defect. Supplied in a 350g or 750g glass bottle with a lacquered steel lid.
Osaimi
Osaimi Sidr is lighter and more fluid than Doani. The flavour is cleaner and more floral, with a butterscotch note through the middle and a shorter, sweeter finish.
