IRAM is a single-origin Sidr honey from Yemen. The bees forage Ziziphus spina-christi, the Sidr tree, during the short flowering window that follows the seasonal rains. Doani is one of the recognised Sidr sources, and it is the only source in this bottle. The honey is raw. It is settled and strained, nothing more — not heated, not pressure-filtered, not blended with anything else. Colour, density and aroma shift from one harvest to the next depending on rainfall and how the trees flowered that year. We expect that variation and we do not correct for it, so two bottles bought a season apart will not be identical. Raw honey may thicken or crystallise over time. This is normal and is not a defect. Supplied in a 350g or 750g glass bottle with a lacquered steel lid.
Doani
Doani Sidr is dense and slow off the spoon. The flavour is deep and resinous, with dried fruit and caramelised sugar behind it and a long finish. A faint bitterness at the end separates it from lighter Sidr sources.
